Steps
Sequence Step
1Preheat oven to 375 degrees. Grease muffin tin.
2Add minced ginger with 1/4 cup sugar. Cook over medium heat, stirring, until the sugar melts and the mixture is hot; this takes only about 2 minutes. Set aside and cool until tepid.
3In a small bowl combine lemon zest and 3 TBS. sugar. Let stand for a few minutes and add to ginger mixture. Set aside.
4In a medium bowl, combine flour, salt and baking soda. Set aside.
5In mixter, beat butter until smooth. Add remaining 1/2 cup sugar and beat till blended. Add the eggs and beat well. Add the buttermilk and mix until blended. Then add the flour mixture and stir just until blended. Stir in lemon-ginger mixture.
6Spoon into pan (about 3/4 full). Bake until a toothpick inserted into the center of a muffin comes out clean, 15 to 20 minutes. Cool in the tins for 1 minute, then remove.
