Steps
Sequence Step
1In a medium saucepan cook onion in a hot butter until tender, add rice. Cook and stir for 2 minutes more. Stir broth and pepper. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes.
2Add 1/2 cup of broth to rice and onion mxture ever 5 mnutes or until obsorbed; continue this till all the broth is added. Remove saucepan from heat. Let stand, covered, for 5 minutes. Rice should be tender but slightly firm, and the mixture should be creamy. stir in Parmesan cheese.
