Steps
Sequence Step
1Brown the turkey in a large skillet with the olive oil, over medium heat until brown; breaking up large chucks with back of a wooden spoon. Add the chopped veggies and cook until softened. Add spices and stir for one to two minutes to heat the spices. Add the chicken broth, scraping up the brown bits on the bottom of the pan. Add the rice, salsa, red wine vinegar, whorchestershire sauce and stir to combine. Cook for 5 mins. Then remove from heat.
2Prepare peppers: take off the tops and clean insides to form a hollow cup. Trim bottom of peppers slightly, to allow to sit up right in pan. Spray a 13x9 baking dish with cooking spray and place the peppers in the dish. Stuff each pepper with the stuffing mixture. Top each stuffed pepper with 1 tablespoon low fat cheese of choice.
3Cover the dish with foil (nonstick is best) and bake for 30 mins at 375 degrees.
