cupunbleached all purpose flour

Usda default (100 gm - 4 oz)Velveeta cheese 2%

cup, shreddedreduced fat colby cheese

cups dicedpotatoes cubed and cooked

cups dicedpotatoes - Baby Red, leave skin on (boiled and halved)
Steps
Sequence Step
1In a large saucepan melt butter over medium heat. Stir in flour, salt and pepper (to taste) until smooth.
2Cook and stir for 1-2 minutes. Remove from heat and stir in sour cream and cheeses.
3Cook and stir over low heat just until cheese is melted. (The sauce will be thick!)
4Remove from heat and stir in eggs, potatoes, and onion.
5Pour into a greased 2-quart casserole dish. Bake uncovered 350F for 30-35 minutes until bubbly and edges are golden brown.
