medium (approx 2-3/4" long, 2-1/2" dia)red sweet pepper
Steps
Sequence Step
1Cut chicken, peppers, and onions into bite size chunks
2Put chicken chunks into a sealable plastic bag and put 1/3 of the Italian dressing in the bag to marinate the chicken.
3Put pepper, mushrooms and onion chunks into anouther plastic bag and pour in the remainder of the Italian dressing. The veges can marinate up to a day, but for at least 20 minutes
4Pour off the marinade and discard. You can put the chicken chunks onto skewers or use a wok style pan to place on grill. If you use wooden skewers, soak them for about 20-30 minutes in water to keep them from burning. Gill @ 10 minutes on skewers, turning to lightly char all sides. If using a pan, mix the chunks often. When no longer pink, pull off grill and keep warm.
5Veges can also be put on skewers and you would cook as you did the ckicken. You want the veges to start to char/blacken a bit, and starting to soften.
6I serve this with brown rice or a side of baby red potatoes roasted with a bit of olive oil and tarragon. The Wishbone Italian dressing does wonderful things when cooked on a grill, You could also use steak instead of chicken. If using steak, it can marinade in the fridge for up to a day.
