large whole (3" dia)Tomatoes, seeded and chopped

peppersjalapeno pepper chopped finely

medium (2-1/2" dia)Onion, chopped

teaspoonsSpices, ground cumin

cupscorn meal

Steps
Sequence Step
1Defrost and Season tilapia with salt and pepper
2In a bowl mix up corn meal (Ground Fritos or Corn chips works better) cumin and salt and pepper.
3Dip Tilapia Fillets in Lime Juice and roll into crumb or corn meal mixture, place on sprayed sheet pan and bake until done.
4While Tilapia is baking dice all jalapenos, onions, tomatoes, and mix together with a little more lime juice.
5Plate done and crispy Tilapia, and top with Pico de gallo Mixture. A Little Shredded Cheddar Cheese could be added if wished.
