medium (2-1/2" dia)Onion, chopped

teaspoonscoarse ground mustard

tablespoonsfreshly squeezed lemon juice

cupmint leaves

tablespoonsbutter

dashsalt, to taste

dashpepper, to taste

peppers, finely diced
Steps
Sequence Step
1Combine the apple and onion quarters and diced peppers in a bowl along with the 2 tbsp butter and season the mixture to taste with salt and freshly ground black pepper.
2Heat a skillet over a medium heat, add the apple and onion mixture and cook, stirring frequently, until the apple quarters have softened, about 8 minutes. This could also be placed on a sheet pan and baked
3Rub some butter over the pork cutlet on both sides and season them to taste with salt and pepper.
4Add the chops to the hot skillet and cook for about 3 minutes per side, until well cooked.
5While the pork chops are cooking, cut the cooked apple and onion quarters into 1/4-inch thick slices. Add the slices back to the bowl with their juices
6Add the lemon juice, mustard and chopped mint to the apple and onion preparation and season to taste with salt and pepper.
7Serve the cooked pork chops topped with a generous portion of the apple and onion preparation.
