poundBeef, round, bottom round, separable lean and fat, trimmed to 1/8" fat, all grades, raw 3-4 pounds

cups, shreddedCheese, mozzarella shredded
Steps
Sequence Step
1Place pepper halves in a baking dish.
2Place 2 Tablespoons cheese in each pepper.
3Heat olive oil in skillet over medium high heat.
4Add onion and garlic and saute until softened and onions begin to carmelize.
5Add mushrooms and continue to cook for about 3 minutes, stirring frequently.
6Add roast beef, beef broth, salt, pepper, and .5 teaspoon steak seasoning. Allow mixture to come to a boil.
7Turn heat to low and simmer until most of the liquid is evaporated.
8Spoon mixture into peppers.
9Bake at 375F for 20-30 minutes or until peppers are soft.
10Remove from oven.
11Evenly divide remaining cheese over peppers.
12Return to oven for 10 minutes or until cheese is melted and bubbly.
