1 | Preheat oven to 250 degrees. |
2 | Spray 2 large foil roasting pans with cooking spray. |
3 | In microwave pop 3 bags of plain popcorn and pour them evenly into the 2 prepared roasting pans. |
4 | Place the roasting pans with popcorn into the 250 degree oven to keep the popcorn warm while you prepare the caramel. |
5 | Melt the butter, sugar, corn syrup, and salt over medium heat and bring to a boil stirring constantly. |
6 | Boil for 5 minutes without stirring. |
7 | Remove from heat and stir in the baking soda and vanilla. (caramel mixture will fluff up) |
8 | Evenly pour the caramel mixture over the warm popcorn. |
9 | Stir to coat all of the popcorn. |
10 | Place roasting pans back into the oven and allow to cook for 30 mins, stirring well after 15 and then again after 30 mins. |
11 | Spread caramel corn out onto waxed paper to break up and allow to cool. |
12 | Place into airtight containers and enjoy! |
