Recipe Description While looking for a low carb breakfast option that I could grab and go, I came across several variations of the mini frittata.

Usda default (100 gm - 4 oz)Ham, smoked, diced

Steps
Sequence Step
1Preheat oven to 350 degrees.
2Spray muffin tin.
3Beat eggs in a large bowl.
4Stir in remaining ingredients.
5Pour 1/3 C batter into each muffin tin.
6Bake for 20-25 mins. Can be refrigerated or frozen for a quick breakfast or snack.
