11. Spray small skillet or non-stick frying pan with non-stick spray. Set aside. 2. In a high speed food processor (Magic Bullet or similar) combine two (2) egg whites and 1 tablespoon of chia seeds. Cover and blend till seeds are thoroughly processed. 3. Add ¼ cup of the vanilla protein powder, 1 ½ teaspoon of stevia and optional pinch of salt. Blend until smooth and chia seeds have developed a more gel like batter. This will take about 15-20 seconds. Pour batter into a clean bowl for easier measuring purposes. Use the rubber scraper to scoop out additional batter in the processor. 4. Turn on stove to a medium to medium-high heat, depending on the power of the stove. Gas range and electric will vary. 5. Allow pan to heat up. If necessary splash a few drops of water on it and look for sizzling. If this occurs your pan is hot enough. 6. Obtain a clean ¼ measuring cup and scoop approximately ¼ of the batter and pour into the hot skillet. Spread around to make an even circular pancake shape if the batter does not disperse on its own. 7. Allow to cook for 2-3 minutes or until brown on underside. Flip with spatula and all to cook till evenly brown on opposite side. Thorough cooking time will vary based on heat of flame or stove.
