Recipe Description A light as a cloud, honey pancake that has whipped egg white folded in for extra oomph. I've made it gluten free by using almond flour instead of regular flour. I also used coconut milk instead of regular cows milk.

Steps
Sequence Step
1Heat oven to 200°C/395°F
2Heat a small 6"/8" oven proof frying pan
3In a bowl, whisk one egg white until it is white and peaky.
4To make the main batter, in another bowl, mix the other whole egg with flour, salt, honey and vanilla. then whisk in the warm milk.
5Gently fold the egg white into the batter with a metal spoon.
6Melt one tablespoon of butter in the pan.
7Pour the batter in and cook on the stove top for a few minutes until starting to set at the very edge.
8Sprinkle some fruit on top.
9Bake the whole lot in the hot oven for 7 minutes until puffed up and golden.
10Drizzle with honey.
11Double it all up and use a full size pan if you want to share.
