Steps
Sequence Step
1Add water, oil, honey, salt, dough enhancer and yeast in Bosch mixing bowl.
2Grind wheat
3Add several cups of flour and mix
4Add flour 1 cup at a time while mixing until dough forms
5Knead on speed 2 ten to twelve minutes
6Hint: If dough seems too stiff may add small amount of water. Dough should not be too sticky. Sides and bottom of the bowl should be clean as dough is kneading.
7Dump dough on counter top or cutting board that has been coated with a tablespoon or so of oil. Divide into five or six loaves, weighing 1.25-1.5 pounds.
8Form into smooth evenly shaped loaves by slamming dough down then rolling into loaf. Place in greased bread pan. (I recommend Norpro dimpled pans. They are more narrow which allows wheat gluten strands to rise up forming a rounded top rather than a flat one. The dimples help brown evenly.)
9Let rise until doubled in size (At least one inch over top of pan)
10Bake at 350 for 20-22 minutes. Remove from pans and cool on cooling racks.
