Recipe Description had farm fresh eggs and kale on hand and extra ground meat left voer from several dishes the week before. This is what came of it.

poundGround Beef, 90% lean

ouncesground pork

unit, yield from 1 lb rawground turkey

tablespoonolive oil

teaspoonthyme, dry, ground

teaspoonbasil

teaspoonsea salt or kosher salt (medium to fine grain)

teaspoonblack pepper, ground

tablespoonscoconut milk
Steps
Sequence Step
1Preheat over 375
2Saute onion and garlic in olive oil 2 to 3 mins, add ground meat and spices. Brown meat. Does not have to be fully cooked, but mostly.
3Spray olive oil in 13 x 9 baking dish
4Wash and tear kale into pieces, place in baking dish
5Scramble eggs. add salt and pepper to taste. May want to add a little water to this step for fluffiness. Sometime I add coconut milk too.
6Put browned meat in baking dish, distribute evenly
7pour scrambled eggs over meat and kale
8bake for 20 to 25 minutes
