cup100% Organic Finely Shredded Coconut

Steps
Sequence Step
1Put almonds and hazelnuts into food processor and pulse until ground fine. Remove from processor bowl into a large mixing bowl.
2Put cut up, pitted midjool dates into processor and pulse until mixture is a paste that holds together in the processor.
3Add cocoa powder to date paste and process until mixed. Remove cocoa date mix to mixing bowl with the nut mix.
4Put sunflower, flax and pumpkin seeds in processor with the coconut. Pulse until mixture is fine like the nut mixture. Add to bowl with nuts and paste.
5Sprinkle Chia Seeds over all and mix by hand until all is incorporated.
6Press into desired shape and chill.
7Once chilled, place on cutting board and with a sharp knife, cut into portions. Recipe is designed for 16 "power bites" but can be put into bar form as well.
8Wrap in plastic or container and keep in fridge until needed. Does not need to be refrigerated but will soften at room temperature.
