| 1 | Put almonds and hazelnuts into food processor and pulse until ground fine. Remove from processor bowl into a large mixing bowl. | 2 | Put cut up, pitted midjool dates into processor and pulse until mixture is a paste that holds together in the processor. | 3 | Add cocoa powder to date paste and process until mixed. Remove cocoa date mix to mixing bowl with the nut mix. | 4 | Put sunflower, flax and pumpkin seeds in processor with the coconut. Pulse until mixture is fine like the nut mixture. Add to bowl with nuts and paste. | 5 | Sprinkle Chia Seeds over all and mix by hand until all is incorporated. | 6 | Press into desired shape and chill. | 7 | Once chilled, place on cutting board and with a sharp knife, cut into portions. Recipe is designed for 16 "power bites" but can be put into bar form as well. | 8 | Wrap in plastic or container and keep in fridge until needed. Does not need to be refrigerated but will soften at room temperature. |
