| 1 | Combine cottage cheese, cream cheese and 1/2 cup of half and half in the bowl of a food processor. | 2 | Add 3 cloves of garlic and processing again. | 3 | Add the Parmesan cheese and process until combined. | 4 | Cook pasta according to package directions, omitting salt and fat. Drain keep warm. | 5 | Heat a skillet coated with cooking spray over medium-high heat and cook mushrooms until browned and juices have released, about 5 minutes. | 6 | Add remaining half and half and cheese mixture to mushrooms. Heat until thick and the cheese has melted, about 5 minutes. | 7 | Toss with hot pasta and serve. |
