Recipes - Vegetable and Beef Soup Recipe

Recipe Name

Vegetable and Beef Soup

Submitted by ludwigkm306
Recipe Description This is a basic simple beef and vegetable soup that can be adjusted to anyones taste through addition of spices and other vegies. It is not very kid friendly, at least not for mine (2 and 4 yrs) I am still struggling to get them to eat vegetables.

1
cupLima beans, canned
1
cup, choppedCarrots, raw
1
package (10 oz)Peas, frozen
2
cupsKidney beans, canned
Steps
Sequence Step
1Brown Ground Beef with onions and green pepper.
2Add garlic, cook 2 minutes.
3Add carrots and cabbage, cook 5 minutes (or until they begin to soften).
4Add corn, limas (I use frozen but it was not an option so I listed it as canned), green beans, peas, kidney beans, and stewed italian tomatoes. It will be very thick (I add the tomato juice to desired consistency).
5Salt/pepper to taste (I usually do not add additional, but preferences differ).
6Bring to boil, simmer 20-30 minutes, or until vegies are cooked.
7You can also add pasta or potatoes to the soup and it is good, but it does not freeze well with these additions. Since it makes a lot of soup I usually freeze some for lunches.
