large (7-1/4" to 8-1/2" long)carrots diced

stalks large (11"-12" long)celery, chopped

tablespoonbutter

cupschicken broth, fat free

poundPeas, split
Steps
Sequence Step
1Add olive oil and butter to large soup pot. Melt.
2Add carrots, onion, and celery. Cook until they begin to soften. About 5 minutes.
3Add split peas and chicken broth. Bring to a boil. Simmer 1 hour or until split peas are soft.
4If soup is too thick add additional broth as desired. Salt and pepper to taste. This is also good with vegetable broth to make it vegetarian. I also occasionally add fresh dill for a change. Potatoes can also be added. Change it up to fit your own taste.
