| 1 | Add olive oil and butter to large soup pot. Melt. | 2 | Add carrots, onion, and celery. Cook until they begin to soften. About 5 minutes. | 3 | Add split peas and chicken broth. Bring to a boil. Simmer 1 hour or until split peas are soft. | 4 | If soup is too thick add additional broth as desired. Salt and pepper to taste. This is also good with vegetable broth to make it vegetarian. I also occasionally add fresh dill for a change. Potatoes can also be added. Change it up to fit your own taste. |
