cupApplesauce, canned, sweetened, without salt

cup100% Organic Finely Shredded Coconut

Steps
Sequence Step
1Mix first five dry ingredients in a large mixing bowl and make a well in the middle.
2Mix pineapple, eggs, vanilla and applesauce together well and pour into well of dry ingredients then mix together well. Mix in carrots, walnuts, and coconut.
3Pour into cake pans that have been sprayed with cooking oil. Bake at 350 for 25-30 minutes or until tester comes out clean. Remove from pan and allow to cool completely.
4Frosting: Mix softened butter and cream cheese together add 1 tsp vanilla and mix. Beat in powdered sugar. Frost layers then sides of cake. Can sprinkle with walnuts if desired.
