cupsVegetable stock (low sodium used)

tablespoonsbutter, no salt

tablespoonsall-purpose flour

cup, fluid (yields 2 cups whipped)whipping cream

cupsherry, dry
1/4
cupparsley, minced fresh

tablespoonsoy sauce, organic
Steps
Sequence Step
1Saute onions in butter and oil until translucent. Add mushrooms and cook until tender - about 10-12 minutes.
2Add barley and spices. Cook for 4-5 minutes.
3Add stock.
4Make a golden roux with flour and butter. Add to pot and cook over medium heat until barley is puffed and tender - about 30 minutes.
5Add remaining ingredients and continue to cook for 10 minutes.
