ounceextra -sharp cheddar cheese, shredded

cup, small curd (not packed)cottage cheese

ouncescolby - jack cheese

ounces2% monteray jack and cheddar cheese

cupBread crumbs, dry plain

cupunsalted butter, melted
Steps
Sequence Step
1cook macaroni,drain. In saucepan, add the flour and butter cook for 1 min. Add the milk, bay leaves, paprika, salt and pepper. Bring to a simmer, stirring often. Mix the cheeses together in a small bowl. once the the mixture is at a simmer, add 3 cups of the cheese mixture and cottage cheese. Stir well, remove from heat and remove bay leaf from mixture. Add macaroni to milk mixture, mix well. pour half macaroni mixture into a 2 quart baking dish, cover with half of remaining cheese mixture. In a small bowl mix together the butter and bread crumbs and top macaroni. place in the oven and bake until golden brown, about 30 minutes.
