Steps
Sequence Step
1place ingredients 1-7 in a food processor. Process until smooth (about 1 minute)
2place rinsed quinoa in a large saucepan; add coconut milk, vegetable broth, and salt. Stir to combine and bring to a boil over med-high heat.
3reduce heat to low and simmer for about 15-20 minutes
4drain tofu and cut into large dice. place on a paper towel and set aside
5Trim carrots, cut broccoli into florets, and cut scallions. Set aside
6remove cooked quinoa into a bowl and set aside. Rinse the saucepan and fill with water; bring to a boil.
7heat oil in frying pan and cook tofu over med-high heat until bottoms are golden brown (about 4 minutes)
8add carrots to boiling water and cook about 2 minutes. Add to quinoa add broccoli to boiling water and cook for about 3 minutes. add to quinoa
9add cooked quinoa, dressing and scallions to the bowl and stir to combine.
10garnish with fresh cilantro, peanuts and scallions.
