Recipe Description High Protein & Energy Snack: I'm gravitating towards the Paleo Diet, so I created this recipe out of a desire to eliminate those expensive & so-called "nutritious" protein bars. I don't want all of the processed carbs that are hidden in them because quite honestly, they aren't that healthy. These are really tasty, & my whole family loves them. I recommend making them fairly small & bite-size, as they can crumble a little if you're biting into them. Freezing them keeps the messiness down, but they won't spoil if left at room-temperature. I eat 4-5 with a big glass of water, & I'm FULL!

Sequence Step
1Preheat a large skillet over medium heat, and then toast the Whole Grain Teff about 3 to 5 minutes, or until it has nutty aroma. Remove the Teff from the pan and pour into a large mixing bowl.
2Add the Chia Seeds, Milled Flax Seed, and Coconut to the bowl.
3In a food processor, pulse/chop the Almonds, Walnuts, Pepitas, Dates, Cranberries, and Chocolate Chips together until there are no more large pieces of the Nuts. This may need to be done in several batches depending on the size of your food processor. It should have the consistency of coarse breadcrumbs, but you can adjust it based on how crunchy/chunky you want the balls to be (they keep their round shape better if they aren''t too chunky).
4Add the chopped Nuts/Dried Fruit/Chocolate Chips to the large bowl with the Teff, Chia, Flax and Coconut mixture, and mix thoroughly.
5Remove the lid and foil seal from the Peanut Butter jar, and gently warm it in the microwave on medium-low heat (40% power) for approximately 3 minutes, or until it is fairly liquified.
6Pour the Honey and melted Peanut Butter over the nut mixture, and mix very well to distribute the wet ingredients thoroughly.
7Shape the mixture into bite-size balls, and place on a lined cookie sheet.
8Wrap the pan well, and place in freezer overnight. They can then be transferred to a gallon-size Ziplock bag, and kept in the freezer or refrigerator.
