| 1 | Beat eggs in medium bowl. Add salt and pepper. | 2 | Heat oil in skillet over medium heat, making sure skillet surface is coated. Pour beaten eggs into skillet. Sprinkle 1" pieces of asparagus and 1/2 cup of 1/2" cubed salami onto eggs. | 3 | When bottom is browned (about 7 to 10 minutes) and top still soft but set, slide onto large plate, then flip over back into skillet. Cook for approx. 5 minutes more. Slide back onto plate and let set for 3 to 5 minutes. Cut into 6 and serve with green salad. |
