stalk, large (11"-12" long)celery, diced

large (2-1/4 per lb, approx 3-3/4" long, 3" dia)Peppers, sweet, red, raw, chopped

tablespoonscanola oil

cupscooked beans, drained

cups (8 fl oz)water

tablespoonSpices, ground cumin

Steps
Sequence Step
1Heat oil in dutch oven over medium heat. Add vegetables and cook 10-12 minutes.
2Add spices, tomatoes and water. Stir gently. Simmer 45 minutes
3Add drained beans, stir gently, simmer an additional 30 minutes.
4Serve with fresh parsley or cilantro, sour cream, grated cheese, etc.
