Ingredients
Amt. Measure Ingredient
3
tablespoonsyeast, active dry
4
cups (8 fl oz)very warm water
3/4
cuphoney
11
cupswhole wheat flour, freshly ground
3
teaspoonssea salt
1/3
cupfreshly ground golden flax seeds
Steps
Sequence Step
1Grind wheat.
2Add yeast, water, and honey, then gently mix.
3Let rest for 5 minutes until yeast foams.
4Add 10 cups of whole wheat flour to start, then gently mix with paddle attachment (if using a KitchenAid stand mixer).
5Add sea salt and ground flax seed.
6Gently mix again just until the salt and ground flax seeds are mixed in.
7Knead for 4-6 minutes. (I use my KitchenAid for this. If you are kneading by hand you might want to knead a little longer.) Now this dough is really sticky and you are going to think that you need to add more flour. Sometimes you might have to add a little more, however just know that the dough will be very sticky and you only want to add enough flour that the dough barely pulls away from the bowl.
8Let dough rise for about 15 minutes, until doubled in size.
9Spray the back of your hands with cooking spray and punch down the dough really well. I like to count to 30 but that is not actually necessary.
10Separate dough to form into loaves. This will make 3 one and a half pound loaves. Put into greased loaf pans.
11Let rise in pans for about 30 minutes.
12Bake in 350 degree oven for 30 minutes. I like to put a large glass baking dish filled with water on the lower rack to keep bread from drying out.
13Remove from pans immediately and let cool on a cooling rack.
