Steps
Sequence Step
1Preheat oven to 375. Strain spinach. Melt butter over medium heat, add garlic and onion until fragrant, stir in spinach and cook for five more minutes. Remove from heat. Mix in ricotta, yogurt and 1C of Monterey Jack. Warm tortillas until flexible, spoon about 1/4 C of mixture into each tortilla. Roll and place seam down in 9X13 baking dish. Pour enchilada sauce over top and sprinkle with remaining cheese. Bake for 15-20 minutes until lightly brown at edges.
