filletssalmon, app. 3 oz., cut 1-1/2 thick

teaspoonsolive oil

cup, slicedFennel, thinly sliced

cup (8 fl oz)hot water
1/4
cuporange juice
1/4
cupblack olives pitted
Steps
Sequence Step
1Heat olive oil over medium-high heat.
2Add fennel and cook for about 5 minutes until slightly limp and browned.
3Remove from pan and set aside.
4Add hot water to the pan and place the salmon skin side down.
5Cook medium-high until water begins to boil, then reduce heat medium-low.
6Cover and cook for 7 minutes.
7Remove Salmon from pan.
8Reserve 3 tbsp. of the liquid in the pan and discard the rest.
9Return the reserved liquid to the pan.
10Stir in the orange juice, reserved fennel and olives, cooking until heated through.
11Divide among individual salmon pieces and serve immediately.
