filletsalmon, app. 3 oz., cut 1-1/2 thick

teaspoonlemon juice

teaspoonLemon peel, finely grated

clovegarlic minced

teaspoonpepper, to taste
1
tablespoon choppedGreen onion, sliced

fruit (2-5/8" dia)orange peeled and sectioned
Steps
Sequence Step
1Preheat the broiler.
2In a small bowl mis the juice, peel, garlic and pepper.
3Rinse the fish and pat dry.
4Place the fish on a greased broiler pan.
5Brush with half of the juice mixture and broil for about 5 minutes.
6Turn and brush with the rest of the juice mixture.
7Broil about 5 more minutes, or until the fish flakes easily.
8Cut in half, sprinkle with green onion and serve with orange slices.
