Steps
Sequence Step
1In a small pan heat oil and over medium heat, cook onions till soft
2Add chicken to onions, cut into pieces and cook until no longer pink inside
3Put black beans with some water to swell for five minutes.
4In large stock pot put six cups of water, garlic and thyme to boil
5Add carrots, peas, chicken, potatoes, and squash. Reduce heat. Cover and let simmer for 10 minutes or until vegetables soft.
6Pour the water off the black beans and add to the pot
7Add the uncooked rice and more water if needed.
8Put the pepper and margarine in the pot and allow to simmer for another 20 minutes or until rice is tender.
9Allow to cool and serve and enjoy
