cupcoconut milk, canned, full fat

teaspoonSpices, ground cumin

Steps
Sequence Step
1In a large skillet on medium-low heat, melted the coconut oil and sauté onions until soft (about 5 minutes). Add the garlic, the spices and cook another minute.
2Add tomato paste and coconut milk. Whisk thoroughly and begin to bring to a simmer.
3Add the chicken, cover for 20 minutes, or until chicken is done.
4In another sauté pan on medium-low heat, add coconut oil and cook the spinach until it wilts.
5Once wilted add the spinach to the chicken. Just before taking off the heat add in the butter and melt. Stir until it is all mixed and then serve.
