| 1 | put yeast,water and sugar in a bowl. Let sit for 10 minutes until foamy. | 2 | add flour and salt and 1 cup warm water. mix until shaggy dough forms. use dough hook to kneed on low for 10 minutes. cover bowl with plastic wrap and let rise for 2 hours. | 3 | divide dough into 10 pieces, roll each in a ball. cover and rest for 10 minutes.
place oven rack on lowest shelf setting, put your sheet pan on it. heat the oven as hot as it will go.
