bunchKale, stalks removed and discarded

1In pan or pot heat oil. Remove chicken skin if needed. Season chicken with salt and pepper. Brown both sides in oil. No need to cook all the way. Remove to plate. Add chopped onion and mushrooms to pan and cook about 5 minutes or until onion is soft. Add more oil if needed. Stir in flour and let cook a minute or two, stirring all the time. Add broth and stir to mix in flour. If using crock pot add chicken, both mixture, onion and mushrooms, bay leaf. Cook on low about 2 hours. Peel sweet potatoes and cube. Add to crock pot. Let cook about 4 hours more. Add Kale the last 30 minutes and let wilt.
