Recipe Description This makes a double batch. I prefer whole milk, not half and half or cream, as it makes a cleaner custard. I use one half a vanilla bean pod, scraped, as well as extract. Also, I use 4 Tb Cointreau, which isn't in this database, but the net says 1 oz (2 Tb) = 103 calories. You don't have to use it, but it lends a nice fresh flavor without tasting orangey.

Sequence Step
1Put all in the mixing bowl
2Oven to 350
3in a 12 muffin tine pour a tsp. of stock into the bottom of each tin
4put the meatloaf mixture in the tins
5Bake for 25-35 mins depending on size of cupcake
