Recipe Description Can be made in an 8x8 cake pan, cupcake pan, or bundt pan (double recipe). We use cupcakes for portion control. Original recipe modified to be a heart healthy treat.

Irish Oatmeal Cake
Ingredients

cupApplesauce, canned, unsweetened, without salt

cupSugar Substitute (Stevia)

cupegg substitute, liquid

cupall purpose flour

cupwhole wheat flour

teaspoonsalt

Steps
Sequence Step
1Steep oatmeal, water, and applesauce together for 20 minutes.
2Cream together brown sugar, sugar, sugar substitute, egg substitute. Add in oatmeal mixture. Mix together.
3Mix together flour, oat flour, salt, cinnamon, all spice. Add to mixture in step 2. Mix all together well.
4Pour mixture into lined cupcake pan.
5Bake at 350 degrees for 25-30 minutes.




Lemon Glaze

Sequence Step
1Mix sugar and lemon juice together.
2Pour mixture over warm cake. Let cool.
