Steps
Sequence Step
1Combine the egg, cayenne, mustard, salt, lemon juice, vinegar and 1/4 c. oil in the container of a blender or food processor.
2Wash and hull fresh strawberries
5In large stainless steel pan, add strawberry puree, remaining apple cider vinegar, lemon juice to sugar.
6Stir thoroughly and bring to full boil. Boil until you can no longer keep the boil from coming up by stirring.
7Turn off heat and skim foam off with large stainless steel spoon.
8Ladel jam into jars leaving 1/4" headspace.
9Clean threads and tops of jars and add lids and collars. Only hand tighen and process in water bath for 10 minutes.
10Allow to cool on rack. Be sure that lids have sealed. Store in cool place and refrigerate after opening.
