| 1 | Slice cucumbers and onion into very thin slices. You may need to cut the onion into quarters or halves. Place in a storage bowl with lid. | 2 | Stir together vinegar, water, sugar and pepper and pour over onion/cucumber mix. Salt may be added but you do not really need it. | 3 | Cover and marinate at least an hour. Turn bowl to redistribute liquid frequently. It is better to let it marinate over night. The longer this sits, the tastier it gets. | 4 | Makes six to eight servings. |
