1This makes one gallon (16 x 1 cup servings) of Gazpacho so even with a large blender you will need to process in at least two batches. Try to do equal amounts of each ingredient in the batches to make seasoning easier. I season each batch as I go. Trim stem from Tomatoes and chop into quarters. place in large blender.
2Peel and course chop the cucumbers and place in blender.
3Peel the sweet onions and cut into quarters and place in blender.
4Blend ingredients till a smooth, thick liquid. Add salt and fresh ground pepper to taste.
5Add bread crumbs while blender is on. blend for a moment to combine
6While still blending, slowly pour in olive oil.
7Chill till quite cold and serve chilled. You can reserve a tomato, chunk of onion and cucumber to dice as toppings. Sliced avocado is great as a topping. your favorite flavor croutons can be added too. It becomes insanely rich with a tablespoon of sour cream on top but watch the calories! ;-)
