Recipe Description I wanted to make a low sugar, high protein cookie that would not upset my hypoglycemia issues. This is not a sweet cookie, but it satisfies.

cup (not packed)raisins, seedless
Steps
Sequence Step
1Prepare cookie sheet with parchment paper. Preheat oven to 350 degrees.
2Beat together the first six wet ingredients with a whisk.
3In a separate bowl, blend the remaining dry ingredients.
4Combine wet and dry ingredients, stirring until smooth, adding raisins last of all.
6Bake for 16 minutes. Cool slightly and remove from pan.
