Steps
Sequence Step
1Preheat oven to 350 degrees
2Chop spinach into smaller pieces and set aside with peppers
3In a large bowl, add all ingredients, and whisk/mix together
4In a non-stick muffin, pour about 1/2 (or a little less) of the egg mixture into each cup. Total should be 12 cups.
5Place in oven for 15 minutes, or until eggs have risen and cooked in the inside. Use a toothpick to check the center for doneness.
6If you do not want to pour into a muffin pan or pan is not non-stick, add cupcake liners and pour into them. Or spray the pan with non-stick cooking spray.
