Steps
Sequence Step
1In a large bowl, combine water, yeast and light brown sugar; mix well and let stand for 10 mins. Add buttermilk, orange juice, salt, honey, oil and eggs. Beat well. Add 1 cup whole wheat flour, wheat bran, oat bran, flaxseed, steel cut oats, cracked wheat, 1 cup bread flour and baking soda.; beat for 1 min. Let bread stand for 30 mins
2Gradually add enough remaining whole-wheat flour, white bread flour and white whole wheat flour to form a firm dough. Turn onto floured surface and knead for 10 mins. Place dough in greased bowl, turning once to grease top. Cover and let rise for 1 hr.
3Turn dough onto floured work surface and let rest for 10 mins. Grease 4 bread pans 9" x 5" and set aside. Punch down dough and divide into 4 parts. On a floured surface, roll or pat to 7" x 12'' rectangle. Roll up tightly, starting with the 7" side. Place in prepared pans.
4Cover with towel and let rise til double, about 30 mins. Preheat oven to 350 degrees. Bake loaves for 35-45 mins or until golden brown. Brush each loaf with butter or Pam cooking spray and place on wire rack to cool completely.
