Steps
Sequence Step
1In a large bowl, combine water, yeast and light brown sugar. Mix well and let stand for 10 mins. Add buttermilk, orange juice, salt, honey, oil and eggs. Beat well. Add 1 cup whole wheat flour, oat bran, cracked wheat, 1 cup white bread flour, wheat bran, ground flaxseed, steel cut oats and baking soda. Beat for 1 min then let stand for 30 mins.
2Gradually add remaining flour to form a firm dough. Turn onto floured surface and knead for 10 mins. Place dough in greased bowl, turning once to grease top. Cover and let rise for 1 hr.
3Turn dough onto floured surface and let rest for 10 mins. Grease 4 baking loaf pans 9" x 5" and set aside. Punch down dough and divide into four parts. On floured surface, roll or pat into 7" x 12" rectangles. Roll up tightly starting on the 7" side. Place into prepared pans.
4Cover with towel and let rise til double about 30 mins. Preheat oven to 350 degrees. Bake loaves for 35-45 mins or until golden brown. Brush each loaf with butter or Butter flavor Pam cooking spray. Place on wire rack to cool completely.
5This recipe can be make 2 loaves of bread and use the other 2 loaves of bread dough for dinner or sandwich rolls. 16 rolls per loaf size = 1 loaf of bread to maintain the nutrition information. Gently slice roll''s tops down the center before 2nd rise time.
