| 1 | Saute onion in 1 TB chicken broth until soft. | 2 | Add chopped chicken and brown both sides. | 3 | Add remaining ingredients, except spinach. | 4 | Flavor with garlic, cayenne pepper, sea salt, basil, and oregano to taste. | 5 | Cook another 10 minutes, then add spinach. | 6 | Cook another 5 minutes or so until spinach cooks down. | 7 | Divide into 4 even containers. Serve with 1 piece whole grain Wasa toast. |
