cupArborio Rice, white, short-grain, raw, unenriched

cups (8 fl oz)vegetable broth low sodium

tablespoonsbutter

cup, choppedOnion, chopped

fluid ouncedry vermouth
Steps
Sequence Step
1Toast rice with onion, then add butter.
2Add vermouth, slowly, stirring over medium heat until absorbed.
3Increase heat to medium high and add broth , one cup at a time, stirring until absorbed. Make sure that each cup is absorbed before adding next cup. Rice will be tender in a creamy mixture when done. About 30 minutes. Serve warm - thickens as it cools.
