| 1 | Toast rice with onion, then add butter. | 2 | Add vermouth, slowly, stirring over medium heat until absorbed. | 3 | Increase heat to medium high and add broth , one cup at a time, stirring until absorbed. Make sure that each cup is absorbed before adding next cup. Rice will be tender in a creamy mixture when done. About 30 minutes. Serve warm - thickens as it cools. |
