Steps
Sequence Step
1Preheat oven to 235f. Using 2 large sheet pans, divide oatmeal evenly. Warm canola oil in glass measuring cup in microwave. Divide evenly between pans. Mix well with fork. Use same cup for molasses and warm (easier to mix) then divide into pans. Blend well. Divide brown sugar into pans and blend well. Chop nuts and add to pans, dividing evenly, mix well. Add spices and salt as evenly as possible and blend well. The dried fruit is added after the granola is cooked. If you add early they will turn into tooth breakers.
2Put pans into oven and cook in 45 min. periods for 4 hours. Switch pans around in oven and mix granola with fork each time. You want the granola ingredients to dry out and brown as evenly as possible. The 4 hrs is more/less depending on your humidity and the size of your pans. When it is dry and evenly browned, remove pans from oven and allow to cool to just warm.
3When granola is just warm divide the dried fruit evenly between the pans and mix well. When cool store in a large containers away from humidity.
