Recipe Description This is similar to the kale and spinach balls in the frozen section at Trader Joes, but I think they are even better. Also somewhat flexible.

Ingredients

tablespoonunsalted butter, cold

package (10 oz)Spinach

cupAlmond Flour

ounceCheese, parmesan, grated
Steps
Sequence Step
1Heat butter and oil. Add chopped onion and saute until softened and translucent. Add spinach and kale and cook until they wilt.
2Place cooked contents into a food processor along with chopped scallion and pulse for several seconds. Transfer to a medium bowl
3Add one egg, almond meal and cheese. Mix with a spoon until well combined. Add salt and pepper to taste and a dash of cayenne (optional).
4Preheat oven to 375. Cover a baking sheet with parchment paper (preferably reusable). Use a cookie scoop to make balls and place them onto the baking sheet. They can be close together, but not touching. Bake for 15 min. Serve warm or cool, but not great cold.
