Steps
Sequence Step
1Bring a large pot of water to a boil over high heat. Stir in soba noodles ad return to boil. Decrease the heat to medium low and cool stirring occasionally until tender but firm ( 5-8 minutes) Drain in a colander and rinse under cold water.
2Put the oil, vinegar, tamari, maple syrup, garlic, ginger, cinnamon and cumin in a medium size serving bowl and whisk until well blended.
3Add the bok choy, optional sprouts, radishes and almonds, add the carrot, celery, and green onions. Stir gently until well combined.
4Add the noodles and toss gently. Sprinkle the toasted sesame seeds and serve at room temperature
