| 1 | Heat olive oil in heavy skillet. | 2 | Sprinkle oregano and Montreal seasoning over chicken pieces and pat in, on all sides. On medium heat, cook chicken breasts, turning once, until juice is clear when pierced with a fork. That took me about 6 minutes on each side. The rub on the outside of the chicken will turn black, but still taste good. | 3 | Remove chicken and melt butter in same pan. Add onions and mushrooms and cook until onions are tender. |
