| 1 | Preheat oven to 375.
Brown bread crumbs in 1 T olive oil.
Combine all remaining ingredients with 1/4 cup olive oil. Toss well, scrape into shallow 2.5 quart baking dish and smooth over the top. Sprinkle on the bread crumbs and press them down evenly. Bake 1 hour or until the vegetables are very tender. |
